Fruit Loaf

It's been a few years since I made this recipe, but I have so much dried fruit that hasn't been used.  This recipe comes from an old high school friend of Gabby's, Kylie.  Years ago we got the recipe off her friend and it's forever been called Kylies Froot Loaf, cause that's how Gabby wrote it in the recipe book.  It's pretty healthy, no sugar, no fats or oils, but tastes great, even better hot out of the oven with a dob of butter melted onto it. Just don't eat too much all at once or you might just get the farts!!


Kylies Froot Loaf

1 cup coconut
1 cup wholemeal flour
2 tsp baking powder
2 cups of favourite dried fruits, chop the apricots, 
pears, I used sultanas, currants, raisins & dried pear
1 cup milk
1 egg

Mix all ingredients, pour into a greased loaf tin, lined 
with baking paper, the fruit sticks to the pan a bit.
Bake in a moderate oven (180 C)for 1 hr
